The winter solstice festival originated in the Han Dynasty and flourished in the Tang and Song dynasties. "Qing Jialu" even has the theory of "the winter solstice is as big as the year". In the Tang and Song Dynasties, the winter solstice was a day for worshiping the heaven and ancestors. On that day, the emperor was going to hold a ceremony in the countryside. The people were going to worship their parents and elders on that day. Now there are still some places celebrating the winter solstice.
At the end of the Eastern Han Dynasty, there was a doctor named Zhang Zhongjing. He is skilled in medicine. He can get rid of any disease at his fingertips. People call him "the miracle doctor".
One winter, when Zhang Zhongjing came back from practicing medicine in other places, he saw that the poor people, because of their lack of cotton padded clothes, had their bodies and faces, especially their ears, frozen. Some people even have black ears and fester. He is anxious in his eyes.
As soon as he got home, Zhang Zhongjing and his disciples set up a shed in the open space and set up a big pot. They put some mutton, pepper, ginger, pepper, fennel, soap horn and other herbs to boil together. After cooking, take it out and break it, then boil it in the shape of ears. Zhang Zhongjing called it "Quhan Jiaoer soup".
On the day of the winter solstice, the shed was crowded with people. Zhang Zhongjing and his disciples gave each of them a bowl of cold dispelling soup and two delicate ears. Strange to say, after people drink cold dispelling soup and eat jiao'er, they feel that their ears are hot and their whole body is warm. The ears will be all right in less than half a month.
Later, on the day of the winter solstice, people made dumplings like jiao'er. It's said that the dumplings from the winter solstice won't freeze their ears.
